i've never made it, but i ate a lot of it as a child. i'll have to look around for a recipei'm fairly certain that you have to dry them first... although most restaurants (and my grandparents, who would make it at home) buy their fins already dried.There are a number of companies in Oz that sell dried shark fin to east asia, so it shouldn't be too difficult to source.
