Kitchen Bans the F-Word
Banning swearing in the kitchen? It may sound like a tall order but one chef in Scotland is determined to buck this trend.

Ralph Porciani, executive chef and beverage manager at The Westin Turnberry Resort, Ayrshire, says: “I don’t feel a need to yell at my team in order to get the best out of them.”

“TV programmes such as Ramsay’s Kitchen Nightmares and the F Word seem to delight in showing chefs as intimidating characters and I don’t believe this is a good thing for the industry.

“How can we encourage more young people to consider a career in hospitality when they think they will be encountering this sort of stress and working environment?”

As well as banning swearing, Ralph also discourages shouting in the kitchen as again he believes it does not provide a positive working environment. He is even taking it so far as to put a halt to calling out the orders, or somaging, a decision that other chefs may well question, but he defends himself by saying:

“I want to provide an alternative from the stressful place that a kitchen usually is and aim for a more peaceful environment, which will allow my chefs to concentrate on creating first class dishes more efficiently. You don’t get the culture if you don’t create the environment.”
